While it is true that the key to fighting diabetes is to cut out sweets from your diet, you need not to deprive yourself of these delicious treats. Diabetics need to know that there are still a number of delicious desserts which is low in sugar and healthy as well:
Banana Split Cake
Ingredients:
4 medium -sized bananas, sliced
10 ounces canned, crushed pineapple, drained
6 1/2 graham cracker sheets
3 tablespoons almonds, chopped
1 ounce sugar-free, instant vanilla pudding mix
2 cups fat-free milk
8 ounces light cream cheese
8-ounce container light whipped cream
Procedure:
Lay the graham crackers in a pan.
In a bowl, mix the 2 cups of fat-free milk and cream cheese. Whip together, and spread over the graham crackers.
Top with bananas, then spread the crushed pineapple over the bananas.
Spread the whipped cream toppings and sprinkle with almonds
Makes 16 servings.
Coconut and Cherry Cookies
Ingredients:
1 and ¼ cup finely shredded and unsweetened coconut
½ cup dried cherries, finely chopped
3 egg whites
½ teaspoon almond extract
2/3 cup confectioner’s sugar
1/3 cup sugar1/4 cup baking cocoa
Procedure:
Place egg whites in a large bowl set aside for 30 minutes at room temperature.
Mix in extract and salt; beat at medium speed until soft peaks formed.
Start adding sugar 1 tbsp at a time mixing at a high speed until all sugar is completely dissolved.
Combine confectioner’s sugar and cocoa into the mixture.
Add in coconut and cherries.
Drop into baking sheets using a round tablespoon at least 2 inches apart. Bake at 325 degrees for 25 to 30 minutes. Cool completely and store in containers.
Makes 36 cookies.
Fresh Fruit salad with creamy lime topping
Ingredients
6 cups of assorted fresh fruits: orange segments, star fruit slices, strawberry slices, apple slice, pineapple chunks.
2 tbsp. lime juice
½ cup light sour cream
1/2cup salad dressing
1 tsp lime peel, finely shredded
2 tbsp. lime juice
2 tbsp. powdered sugar
Procedure:
Make the dressing by combining sour cream, salad dressing, powdered sugar, lime peel, and lime juice.
Mix fruits and garnish with additional lime peel.
Makes 12 servings.
Chicken, fruits, and nuts salad
Ingredients:
1/3 cup vinegar
2 cups cooked chicken breast
2 cups fresh strawberries, sliced
½ cup fresh blueberries
¼ cup walnuts- toasted and chopped.
2 tbsp. honey
1 tbsp. canola oil
1-ounce low-fat cheese
Salt and pepper to taste
Procedure:
Make vinaigrette by combining vinegar, honey, oil and salt in a screw-top container. Cover and shake well.
In a large bowl, toss chicken breast, strawberries, blueberries, walnuts, cheese.
Transfer to a salad plate. Drizzle with vinaigrette and add pepper.
