The use of liquid nitrogen plays on the strength of a phenomenon called nucleation-dominated ice crystallization, it forms a large number of microscopic ice crystals in seconds, resulting in exceptionally smooth textures. It means that the gelato are made-to-order and served at a perfect temperature of -6C which guarantees freshness.
